Marzipan cookies "business cards"
Ingredients for 40 - 45 cookies:
- 250 g plain flour
- 50 g icing sugar
- 100 g white marzipan
- 150 g butter
- 1 egg yolk
- a few drops of almond extract
Place all the ingredients into a bowl, mix until they are combined (can also be done in food processor). Shape the dough into a flat disk, wrap in cling film. Refrigerate for 1 hour (or up to 3 days).
Roll the dough to 4 mm thick and cut with the cookie cutter of your choice then stamp your cookies. Place the cookies on a baking tray lined with baking paper.
Bake at 180ºC for 12 - 15 minutes until slightly golden and until the edges begin to brown. Cool down on a wire rack.
Store in airtight container for max. 7 days.
