Ingredients (makes 2 loaves):
All ingredients should be at room temperature. Sift flour with baking powder, set aside.
Beat the butter with icing sugar, until pale and fluffy. In turns, beat in the egg yolks, one at a time, stir baking powder and flour, add vanilla and vodka. Whisk the egg whites and add 1/3 of the foam to the batter, stir well, to loosen the cake, and then gently stir in the rest of the foam and chopped dried fruits and nuts.
Pour the batter into 2 loaf tins, greased with butter and covered with semolina (size of my tin was 30 x 10 cm).
Bake at 180ºC for about 40 minutes (though the author states 20 minutes), until a skewer comes out clean.
