Muffins with Coca - Cola
- 200 g plain flour
- 2 teaspoons baking powder
- 4 tablespoons cocoa powder
- 160 g dark muscovado sugar
- 150 ml Coca-Cola
- 100 ml sunflower oil
- 2 eggs
- 1 tablespoon cherry brandy (optional)
All ingredients should be at room temperature.
In one bowl combine dry ingredients (flour, baking powder, sugar, cocoa powder). In a separate bowl stir wet ingredients (oil, eggs, Coca-Cola, cherry). Add the dry ingredients to the liquid ones and stir until just combined.
Line a muffin pan with paper muffin cases and fill each case ¾ full. Bake for about 25 minutes at 200ºC until a toothpick inserted in the center of a muffin comes out clean. Remove from the oven and let cool on a wire rack. Decorate the cooled muffins with chocolate glaze and cocktail cherries.
Chocolate glaze: melt 50g chocolate with 1 tablespoon of butter or oil in a bowl placed over a pan of simmering water.
