Easy and quick fresh fruit cake
- 125 g unsalted butter
- 10 Tbs caster sugar
- 3 eggs
- a pinch of salt
- 10 Tbs plain flour
- 1,5 tsp baking powder
- about 400 g your favourite fruits
For the topping:
- white or demerara sugar
All ingredients should be at room temperature. In a bowl sift flour and baking powder, set aside.
In the bowl of an electric mixer cream butter, salt and sugar until lightened and fluffy. Add eggs, one at a time, beating after each addition. Add flour with baking powder, stir just until incorporated.
Line a baking pan (22 cm) with parchment paper. Pour batter into the prepared baking pan and place fruit on top (if you use plums or nectarines, place them cut side up on top). Sprinkle with sugar - if you wish.
Bake for about 40 minutes at 175ºC or until a toothpick inserted in the center of a cake comes out clean.
