In just 2 - 3 weeks, you should knead the dough for the traditional Polish gingerbread. Do not forget!
It is worth having it already prepared in your pantry.
Because winter is just right round the corner...
- 50 g cinnamon bark
- 20 g dried ginger
- 15 g whole cloves
- 15 g cardamom seeds
- 10 g nutmeg
- 10 g allspice
- 10 g black pepper*
- 5 g aniseeds (not necessary, not everyone likes them)
Grind all the ingredients in a coffee mill, grate on a special fine grater or crush in a mortar. Mix together.
Store in an airtight box, keep away from the sun. Spice has a really strong smell and is a bit peppery (you can use less pepper).
For 1 kg flour, you should add 3 - 4 Tbsp of this spice, depending on your taste.
Note: cloves can destroy the coffee grinder, it is best to buy it already ground.
* I recommend adding less because the spice may not suit everyone.
