Muffins with Coca-Cola
I decided to bake muffins using a carbonated drink, Coca-Cola ;-). The muffins are wonderful and delicate. The flavour of the Cola-Cola is not too strong, as it is dominated by the cocoa and muscovado aroma. It can also be replaced with another drink and even carbonated water. Bubbles are important here - they make the muffins light. I finished them classically. I recommend!
Ingredients for 8 - 10 muffins:
- 200 g plain flour
- 2 tsp baking powder
- 4 Tbs cocoa powder
- 160 g dark muscovado sugar
- 150 ml Coca-Cola
- 100 ml sunflower oil
- 2 eggs
- 1 tablespoon cherry brandy (optional)
All ingredients should be at room temperature.
In one bowl combine dry ingredients (flour, baking powder, sugar, cocoa powder). In a separate bowl stir wet ingredients (oil, eggs, Coca-Cola, cherry). Add the dry ingredients to the liquid ones and stir until just combined.
Line a muffin pan with paper muffin cases and fill each case ¾ full. Bake for about 25 minutes at 200ºC until a toothpick inserted in the center of a muffin comes out clean. Remove from the oven and let cool on a wire rack. Decorate the cooled muffins with chocolate glaze and cocktail cherries.
Chocolate glaze: melt 50g chocolate with 1 tablespoon of butter or oil in a bowl placed over a pan of simmering water.
