Wholemeal fruit cake
Yesterday, one of the readers in the comments under the chocolate cake proposed this recipe - today it's already baked! We had a great desire for a cake with fruit :-). Everyone loves the taste, for a wholemeal cake it is very fluffy. You will not be disappointed! Any fruit can be used for the dough.
- 150 g butter
- a pinch of salt
- 120 g dark brown sugar
- 4 eggs
- 4 Tbs milk (60 ml)
- 250 g wholemeal flour
- 2 tsp baking powder
- fruits (any)
- almond flakes
- icing sugar
All ingredients should be at room temperature. In a bowl sift flour and baking powder, set aside.
In the bowl of an electric mixer cream butter, salt and sugar until lightened and fluffy. Add eggs, one at a time, beating after each addition. Add sifted ingredients, milk and carefully mix with spatula.
Line a 27 x 24 cm baking tin with baking paper. Pour in the batter, smooth the top. Place the fruits, cut-side up. Sprinkle with almond flakes.
Bake at 175ºC for about 40 minutes or longer, until skewer inserted in the center of the cake comes out clean.
Take out from the oven, cool. Dust with icing sugar.
